Exploring the History and Cultural Significance of Qatari Harees

Qatari harees is a traditional dish made from wheat or barley, meat (often chicken or lamb), and spices. It's cooked until the ingredients form a smooth, creamy porridge-like texture. It's popular during special occasions like Ramadan and weddings, and it's typically served with yogurt, salad, or bread. Harees is a dish celebrated for its cultural significance, especially in Qatari traditions. Beyond its culinary appeal, harees embodies values of unity, generosity, and hospitality. It's often prepared during special occasions, fostering a sense of togetherness among family and friends. The dish's rich history and enduring popularity highlight its importance as more than just food—it's a cherished tradition that strengthens bonds within the community.

Ingredients:

  • 1 lb bonesless chicken

  • 1 cup harees whole wheat (soaked beforehand, preferably overnight)

  • 2 cups water

  • 1/2 cup ghee

  • 1/4 tsp cinnamon powder

  • 1 tsp roasted cumin powder

  • 2 Tablespoon coriander seeds

  • Salt + Pepper: personal preferences.

Chicken can be substituted with lamb and be considered hares as well.

Instructions:

1. Place the chicken, harees, and water in a large pan. Ensure the chicken is submerged in the liquid. Cook over low heat for approximately 2 hours, stirring occasionally to prevent sticking. As it cooks, periodically skim off any froth that rises to the surface.


2. Once the chicken and harees have cooked thoroughly, remove the pan from heat. Using either a hand blender or a food processor, blend the mixture until it reaches a smooth, creamy consistency. This step is crucial for achieving the desired texture of the dish. Transfer the blended mixture to a serving bowl, ensuring it's evenly distributed.


3. In a separate small saucepan, melt the ghee over low heat. Once melted, add ground cinnamon, cumin, salt, and pepper to taste. Stir the mixture gently to combine the spices evenly, infusing the ghee with flavor.


4. Carefully pour the spiced ghee mixture over the smooth harees in the serving bowl. The fragrant ghee adds richness and depth to the dish, complementing the subtle flavors of the chicken and spices. Ensure the ghee mixture is evenly distributed over the harees.


5. To finish, garnish the harees with whole coriander seeds. Not only do they add a burst of freshness and visual appeal, but they also provide a delightful contrast in texture to the creamy harees. Sprinkle the coriander seeds evenly over the surface of the dish.
