Margoog, A Creamy Emirati intricacy!

Margoog is a hearty lamb and vegetables dish in which it is seasoned with dried spices and limes with added dough to absorb the delicious broth. Known throughout the Arabian Gulf, from Kuwait to Qatar, however, it is widely known to be one of The United Arab Emirates national - or traditional dishes.

Ingredients:

  • Beef Brisket 250g

  • Canola Oil 4tbsp

  • Cow Ghee or Butter, 1tbsp

  • 2 Red Onions

  • 2-4 tsp salt, as liking

  • 1 tsp black pepper

  • Bay Leaves, 3 pieces

  • 1 tsp ginger to add flavor

  • 2 tsp Garlic

  • Tomato (1)

  • Tomato Paste, 3 tbsp

  • Ground Turmeric, 2 tsp

  • Dried Lemons (2)

  • Frozen Vegetables, 1 3/4 cups

  • 100g Arabic Pita

  • Chopped Coriander, 1 cup.


Instructions:

1. In a large pot, heat a combination of canola oil and cow ghee over medium heat until shimmering.

2. Add finely chopped onions, dried lemon slices, minced garlic, and grated ginger to the hot oil mixture. Sauté them until they turn golden brown and become fragrant, releasing their flavors into the oil.

3. Once the aromatics are cooked, add the beef brisket to the pot. Stirring constantly, cook the brisket for about 4 minutes, allowing it to sear and develop a rich, caramelized exterior.

4. Sprinkle ground turmeric and salt over the brisket, followed by adding tomato paste and chopped fresh tomatoes. Stir well to combine all the ingredients evenly and cook for an additional 5 minutes, allowing the flavors to meld together.

5. Cover the pot with a lid and reduce the heat to low. Allow the mixture to simmer gently for about 40 minutes, or until the beef is tender and the flavors have melded beautifully.

6. Once the beef is cooked to perfection, add the frozen vegetables and freshly chopped coriander to the pot. Stir well to incorporate them into the stew, then cover and continue simmering for an additional 5 minutes, or until the vegetables are heated through and tender.

7. Tear or cut the bread into bite-sized pieces and add them to the simmering stew. Gently push the bread down into the liquid so that it can soak up the flavorful broth. Allow the stew to simmer for another 5 minutes, ensuring that the bread absorbs the delicious flavors of the dish.

8. Before serving, garnish the stew with additional chopped coriander for a fresh burst of flavor and vibrant color. Ladle the hot stew into bowls and serve immediately, accompanied by your favorite bread or rice for a hearty and satisfying meal. Enjoy!
